Salmon Cakes
Fish is one of the best things for a diabetic diet. Really it's a good thing for just about everyone's diet. This is an easy and quick thing you can put into your rotation to get more fish into your diet, and even made with canned salmon it's pretty good. Of course you can use fresh salmon (it's a good use for leftover fish from the day before), but more often than not, just because of easy availability, I use canned and it works out great.
Notes:
As with a lot of my recipes, I use some ingredients that ultra-low carb people will tell you that you can't have. Everyone responds differently, just adjust for you. The little bit of bread crumbs in this don't bother me much.
I like to use egg rings to keep them uniformly sized and shaped. Just spray them with a bit of cooking spray or brush them with some of your cooking oil first, salmon is basically all protein, and will stick to them! If you don't have egg rings, just form them into patties, they'll be fine.
Ingredients:

- 1 Can salmon, remove any skin/bones that are left in there.
- 1/2 small onion, very finely diced (or minced)
- 1/2 bell pepper, very finely diced (or minced)
- 1 egg
- Old bay seasoning, to taste
- salt/pepper to taste
- Panko or regular bread crumbs, to taste.. (optional) I don't use a ton, just a few tbsp.
- Garlic Powder, to taste
- Parsley, to taste
- Mayo, maybe 2 Tbsp or so.
- Oil (I use avocado oil), just enough to coat the pan.
Directions:
- Sweat or sauté the onions and peppers until softened, set aside.
- Once the peppers/onions have cooled just a bit, combine them with the rest of the ingredients, (except the oil.) Combine well, but try to keep at least a bit of texture in the fish if you can.
- Heat the oil over medium heat, form into patties or fill your egg rings, fry a couple minutes on each side until browned. If using egg rings, I remove the ring before the first flip, that's enough time that it should retain it's shape for the rest of the cooking time. Just be gentle with them, they're somewhat delicate still.
- Serve with spicy aioli, or hot sauce of your choice.
