Salmon Cakes
Fish is one of the best things for a diabetic diet. Really it's a good thing for just about everyone's diet. This is an easy and quick thing you can put into your rotation to get more fish into your diet, and even made with canned salmon it's pretty good. Of course you can use fresh salmon (it's a good use for leftover fish from the day before), but more often than not, just because of easy availability, I use canned and it works out great. Notes: As with a lot of my recipes, I use some ingredients that ultra-low carb people will tell you that you can't have. Everyone responds differently, just adjust for you. The little bit of bread crumbs in this don't bother me much. I like to use egg rings to keep them uniformly sized and shaped. Just spray them with a bit of cooking spray or brush them with some of your cooking oil first, salmon is basically all protein, and will stick to them!
