Grilled Kebabs

This is one of those posts that calling it a "recipe" is going to be a bit of a stretch..  let's go with..."method". It's also not a particularly spicy dish they way I made it here, but still pretty good!  

Cauliflower fried "Rice"

Rice is one of my very favorite things ever.  And it's...not great--to say the least for your glucose levels (or for a low-carb diet). It's one of the things that I miss the most since starting this journey. Let me be clear, this isn't going to fool anybody into thinking it's real fried rice.  But it's really not bad!  Definitely give it a chance & see if you think it's worth working into your regular rotation.

Salmon Cakes

Fish is one of the best things for a diabetic diet.  Really it's a good thing for just about everyone's diet.  This is an easy and quick thing you can put into your rotation to get more fish into your diet, and even made with canned salmon it's pretty good.  Of course you can use fresh salmon (it's a good use for leftover fish from the day before), but more often than not, just because of easy availability, I use canned and it works out great. Notes: As with a lot of my recipes, I use some ingredients that ultra-low carb people will tell you that you can't have.  Everyone responds differently, just adjust for you.  The little bit of bread crumbs in this don't bother me much. I like to use egg rings to keep them uniformly sized and shaped.  Just spray them with a bit of cooking spray or brush them with some of your cooking oil first, salmon is basically all protein, and will stick to them!  If you don't have egg rings, just form them into patties, they...

Easy Basic Mealoaf

Yesterday I made Chile Verde , and after trimming a big pork roast down to usable cubed pork, I ended up with probably close to a pound of trimmings.  We can't be letting that go to waste, so it's time to get the meat grinder out, grind it up, mix it with some ground beef (also from scraps that I had in the freezer waiting to be ground, and make a meatloaf.  Or you could of course just buy a pound each of ground pork and ground beef.

Egg Muffin Cups

Need something quick and easy to take with you on the run to work for the next couple days?  Give these egg muffin cups a try.  They're super low-carb, and dead simple to make.  It's basically just like making a frittata or Spanish tortilla but baked in a muffin pan for single grab-and-go servings.

Breakfast Burritos

Breakfast burritos are one of my favorite things to make on a weekend when I have the time to put the filling together, and it makes enough that you can freeze some already assembled for a quick weekday breakfast, or just vacuum seal and freeze the filling if you want to make one later with a tortilla that hasn't been previously frozen. Customize and change up the ingredients depending on what you like, or have on hand. This is just a starting point/suggestion here!

Pork Chili Verde

This is a pretty basic pork green chili recipe, and it's astonishingly good!  You can use it for low-carb stuff, (over eggs, in a bowl, etc.), or for the normies, make it into a burrito, put in a taco, put it on nachos, etc.

Basic American Diner-Style Omelet (Omelette?)

Eggs are one of those things that are a great food for people with diabetes, and can be one of those things that can the a little bit tiring/monotonous because we eat so many of them.  The thing about this style of omelette is that unlike a French of Japanese omelette, the star here is (or at least can be) the filling, so you can change it up however you like. Omelettes are pretty fast and easy to make, you really don't need a recipe since the method is pretty simple, and you're almost certainly going to change it up to suit what you like and what ingredients you have available.  But this site is as much about just giving you ideas for things to add into your rotation as much as the recipes.  That and  I wanted to show off the pictures. Probably the omelette I make most often is filled with mushrooms, onions, peppers, ham, and cheddar cheese.  That's what I'm doing today.  Basically it's a Denver omelette with mushrooms added and some better peppers substit...

Pan-seared, balsamic vinegar-glazed brussels sprouts

Welcome back to my onlypans everyone!  (I'm so sorry..) Brussels sprouts are amazing. If you say you don't like them, I'm going to argue that you have been cooking them wrong.  Seriously, give this a try, I think you'll like it!  This is one of my super-picky kid's favorite things.  Not just favorite vegetables...favorite things!
