Orange/Soy Marinated tuna steaks

Orange/Soy Marinated tuna steaks



If you're bored of the standard tilapia, salmon, or (insert other fish here), and if you can find some salmon steaks (they can be hard to come by where I live sometimes), you definitely should give these a try.  If you're thinking of passing because you don't like canned tuna, reconsider..  fresh tuna is nothing like the canned stuff.

Ingredients:

  • Tuna steaks (This makes enough marinade for 4, maybe 6.)
  • 1/4 cup Soy Sauce (ish, I don't bother measuring the soy sauce or orange juice)
  • 1/4 cup Orange Juice
  • 2 tablespoons olive oil (I use less, it really isn't probably even strictly necessary)
  • 1 teaspoon toasted sesame oil
  • 1 tbsp Lemon Juice (I've made it without the lemon juice and it's still great.)
  • 1 tbsp chopped parsley
  • 1 clove garlic, minced.  (You can use granulated garlic as an easy substitute)
  • 1/4 teaspoon chopped oregano
  • 1/2 teaspoon ground black pepper
  • white, or black, (or both) sesame seeds (optional)

Instructions:

1:  Marinade the fish in a zip top bag for at least 30 minutes, up to probably 2 hours would be fine.  Turn the bag occasionally to make sure the fish is evenly marinated.   Reserve the marinade for basting while grilling.


2:  Preheat your grill to high heat and lightly oil the grate.  

3:  Grill the steaks for 5 to 6 minutes on each side, to your desired doneness.  I aim for medium, still pink in the middle.   If you're using sesame seeds, sprinkle them on the top of the fish once it's on the grill, and again after turning.

4:  Baste with the marinate while you're grilling, and discard any remaining.


Serve with whatever sides you like that go with fish...  Today it was some winter squash that we still had in the freezer and a side salad.  Very often with fish I make rice pilaf or quinoa pilaf.  Which I'm just realizing I haven't posted a quinoa pilaf recipe yet..  I'll get that one written up soon, it's one of my favorites.
