Pan-seared, balsamic vinegar-glazed brussels sprouts

Welcome back to my onlypans everyone!  (I'm so sorry..) Brussels sprouts are amazing. If you say you don't like them, I'm going to argue that you have been cooking them wrong.  Seriously, give this a try, I think you'll like it!  This is one of my super-picky kid's favorite things.  Not just favorite vegetables...favorite things!   

Herb-Butter Poached/Oven Baked Halibut

This dinner started out with the intent of being some baked halibut fillets.  But the fillets completely filled the dish that I got out to bake them in, and with the amount of herb butter that I had, it ended up being some sort of hybrid of baked and poached fish.  It wasn't completely submerged like a true poach, but it was close, and it was done in the oven instead of on a stove top.  Either way, it was fabulous and I'll be making this one again!

Muffin-Less Ham, Egg, and Cheese breakfast sandwich.

One of my favorite breakfasts is eggs benedict..  but that's not what we're doing today. Related:  Another of my favorites is the genius creation that is the fast-food knockoff version of eggs benedict, the Egg McMuffin. Here's what I make, that...really doesn't look anything like Egg McMuffin, but honestly isn't terribly far off when it comes to taste.  (Realize that nothing like this is ever going to 100% replace the original), but this still satisfies the craving for me, and is *much* more diabetes-friendly. "The Google" says that an Egg McMuffin has around 30 carbs.  1/2 of the pita I used today ( I use 1/2 of the pita for each sandwich) has 6 (3 net)..  and maybe 1 or 2 in the egg, ham, and cheese). I am cooking for two here, so just doubling the recipe I use two eggs, 1 whole pita cut in half, 2 big slices of ham, 2 slices of cheese, etc.  And it fits better in the pan to make two. This would work just as well with sausage if you are a fan of the ...
