Muffin-Less Ham, Egg, and Cheese breakfast sandwich.
One of my favorite breakfasts is eggs benedict.. but that's not what we're doing today.

Here's what I make, that...really doesn't look anything like Egg McMuffin, but honestly isn't terribly far off when it comes to taste. (Realize that nothing like this is ever going to 100% replace the original), but this still satisfies the craving for me, and is *much* more diabetes-friendly.
"The Google" says that an Egg McMuffin has around 30 carbs. 1/2 of the pita I used today ( I use 1/2 of the pita for each sandwich) has 6 (3 net).. and maybe 1 or 2 in the egg, ham, and cheese).
I am cooking for two here, so just doubling the recipe I use two eggs, 1 whole pita cut in half, 2 big slices of ham, 2 slices of cheese, etc. And it fits better in the pan to make two.
This would work just as well with sausage if you are a fan of the "Sausage McMuffin". And if you wanted to make it a little spicy (and why wouldn't you?) get spicy Italian sausage.
This isn't something complex, and is hardly deserving of an entire "recipe" here...but you're getting it anyway, here you go:
Ingredients:
- 1/2 of a low-carb pita. I am a fan of Joseph's. Either the one marketed as "heart healthy" which I used today, or the "Flax, Oat, & Whole Wheat" version works. They're both fine for this.
- 1 whole egg.
- 1 slice ham of your choice. (or several slices if it's sliced thin)
- American cheese. You could try cheddar or something else if you want, but if you are going for the McMuffin taste, stick with American. Don't get the kind that's individually wrapped. That stuff should be banned.
- Salt and Pepper to taste
- Butter to coat the bottom of the pan
Directions:
- Cut the pita in half and open it up. These can tear somewhat easily because they're thin. I microwave mine for 10 seconds to loosen it up.
- Warm your ham in a skillet over medium heat. (I realize there is 3 slices here and I'm making two servings, You'll need one to eat while making the sandwiches!)
- While the ham is heating, season the eggs with salt & pepper, whisk them with a fork just like if you were making an omelet.
- Once the ham is warmed through, remove it from the pan and wipe the pan clean (or the eggs will stick!
- Melt some butter in the pan, cook the eggs just like an omelet. Remove from the pan and divide it in half for the two sandwiches.
- Put the cheese on the eggs, let it melt for 30 seconds or so
- Assemble 1/2 of the eggs, the ham, and the cheese into the pita halves, and then fold the whole thing in half again to make it closer in size/shape to a breakfast sandwich.
