Cucumber Tomato Feta Salad
This quick and easy cucumber, tomato, and feta salad is super simple to make. We have it often, it's one of my favorite side dishes to go with just about anything. Especially when the vegetables are in season and available from a garden or farmer's market.
Ingredients:
- 1 Cucumber, peeled and sliced, or halved and sliced if it's big. Seeded if it's really big. They're better if they're not really big.
- 8-10 oz Grape tomatoes, halved. Cherry tomatoes would work too if they're good ones (not store bought), If from the store, stick with grape tomatoes if you can get them, they taste better.
- 4-6 oz feta cheese. I like it in a small dice, but the crumbles would be ok too.
- 1/4 or so of a red onion, small dice.
- Cavender's Greek seasoning, to taste.
- Salad dressing of your choice. I like the Olive Garden branded bottled dressing, any good Italian or Greek dressing would be fine.
Directions:
- Peel and slice the Cucumbers, cut the tomatoes in half, chop the onions, dice up the cheese, sprinkle the whole thing with the Cavender's seasoning, and stir in the salad dressing. Be careful not to over-dress it! It's easy to put too much on and have it swimming in salad dressing.
